This Slow-Cooker Whole Chicken with Veggies is the easiest and healthiest meal you can make. You only need 5 main ingredients (salt, pepper & essential spices do not count) and it takes minutes to put together in the slow cooker. A few hours later you’ll have a tender and succulent chicken with a delicious garlicky and mild paprika flavour… I’m telling you this recipe is to die for! But, I must admit, using organic chicken and produce makes a huge difference when it comes to taste! Most of my life I’ve had organic meat & vegetables from my grandparents’ farm… 10 years ago “organic”, “free-range”, “hormone free”, “GMO” weren’t even in my vocabulary, literally! Well things changed a bit when we moved to Canada! Our focus shifted more around adjusting to a new life, working two part time jobs to help pay for day-to-day living costs while working hard to complete our university degrees. You don’t want to know how much you have to pay in tuition fees as an international student – failing courses wasn’t an option for either one of us! When it came to our food choices, the closest grocery store on our way down from school or work was our best bet and that didn’t happen to have many “organic” options… not that I was looking for organic food! Remember?! I didn’t even have that word in my vocabulary! We did start eating healthier once we finished school but it wasn’t until recently that we actually changed our eating habits to include mostly organic food. I guess having a child makes you think more about the food choices you’re making for your family! And honestly, there is nothing better that organic, tasty homegrown produce and meat! Enough with the stories though, let’s get back to our recipe!
Time: 4.25 hrs. Prep: 15 min. Cook: 4 hrs. on High or 8 hrs. on Low
- 1 whole organic chicken
- 5 garlic cloves
- 1.5 pounds small potatoes
- 1.5 pounds green beans, washed and trimmed (I stocked up my freezer with organic green beans from the Farmers’ market in the late Fall)
- 3 Tbsp butter
- 1 Tbsp salt
- 1 Tbsp pepper
- 2 Tbsp paprika
Remove and discard any excess fat from the chicken. Make a rub of minced garlic, melted butter, paprika, salt and pepper. Rub the outside of the skin and the cavity with the mixture and tuck some under the bird’s skin as well. Pierce the potatoes with a fork to let the juices from the chicken in. Place the potatoes in the slow cooker and the whole chicken on top. There is no need to add water or other liquids! Cook for 3.5 hours on high (or 7 hours on low) and then add the green beans. Cook for half an hour more on high (or an hour on low) and get ready to lick your fingers !
5licious – Recipes with Five Main Ingredients or Less
Water, oil for frying, and other essential spices in anyone’s cupboard (salt, pepper, paprika, oregano, basil, rosemary, chili, curry, bay leaves, thyme, cinnamon , vanilla extract, sugar) do not count!
