Strawberry Cupcakes

Happy Valentine’s Day to all of you! I wish you a happy day full of love wherever you are :). My gift to you on this special day is a lovely cupcake filled with strawberry cream, topped with whipped cream and garnished with a heart-shaped slice of strawberry ❤❤❤❤❤

Ingredients:

For cupcakes:

  • 150 g butter, softened
  • 200 g flour
  • 130 g powdered (icing) sugar
  • 3 eggs
  • 2 Tbsp vanilla essence
  • ½ tsp baking powder

For filling:

  • 3 eggs
  • 150 g strawberries
  • 150 g powdered (icing) sugar
  • 55 g butter, at room temperature

Topping & garnish:

  • whipped cream
  • a few strawberry slices

 

Directions:

Preheat oven to 180°C (350°F).

Mix the butter and sugar with an electric mixer until light and fluffy. Add the eggs one at a time, stirring continuously.

Stir in the flour and vanilla essence.

Line a muffin tin with baking cups and pour the batter into the cups. Bake for 20-22 minutes.

For the filling, puree the strawberries.

Beat the eggs, sugar and strawberries in a bowl over a pot of boiling water until thick and creamy.

Cut the butter in small pieces and mix with the strawberry cream. Set aside to cool.

When the cupcakes have cooled to room temperature cut a cone of cake out of the top using a small knife. Fill each cupcake with strawberry filling.

Top each cupcake with whipped cream and garnish with strawberry slices.
