If you’re looking for an easy no-bake cake or a creative fondant-decorated cake, I’ve got you covered!
I am a big believer of the old saying “a picture is worth a thousand words” so to make it easier for you, all my recipes have step-by-step photos and instructions. I hope I will inspire you to make quick and delicious meals for your family and bake creative desserts for your loved ones!
A little bit about me
I am a proud wife and mom, an amateur chef at home, obsessed with feeding my family homemade meals & desserts and a food photography enthusiast. I love to cook easy meals with fresh ingredients (five-ingredient recipes are the best!) so that I can spend the extra time baking and decorating crazy cakes!
Although I am working in IT in the Banking Industry, cooking has been one of my favorite hobbies for more than a decade. I am certainly not an expert but I love to experiment, create my own recipes and test them to perfection! I am also a strong advocate of cooking at home for fun, flavour and a healthy lifestyle.
I grew up in Romania with little exposure to the international cuisine and moved to Toronto, Canada when I was 19 years old. Toronto’s multicultural diversity has definitely made me explore different cuisines throughout the past years so I will share with you our favourite recipes from all over the world. Nonetheless, I still love Romanian food and you will see that influence in some of my recipes.
Why Roxy’s Kitchen?
The idea of blogging came a few years ago from my love for cooking and a willingness to keep track of my own recipes or the ones I decided to try out from a cookbook or a food blog I loved. Since then my focus shifted a bit and my goal now is to evolve my blog into a collection of mostly five-ingredient recipes dubbed as “5licious” and many nicely decorated cakes baked for my family and friends.
How I ended up with this new goal?!
Well, the more I baked and decorated cakes the more I realized how much I loved it! However, with a newborn baby and so close to going back to my full time job at the bank, I had less and less time to put food on the table for my family… let alone spending time on my new baking addiction. So now I prefer cooking quick and easy recipes and in most cases I end up spending less than 30-45 minutes in the kitchen to prepare our meals – five-ingredient recipes have definitely helped! In my spare time, when I’m supposed to get a relaxing massage, go for a mani/pedi or to the gym (as hubby always encourages me to do), I turn to baking as my relaxing therapy… it’s just my way of unwinding and relaxing after a stressful day, plus it’s fun and rewarding!
You can browse through my list of five-ingredient recipes and make a quick meal or, you can bake a delicious and creative cake to surprise your loved ones. Some of my most popular posts are the five-ingredient Almond Coconut Raffaello Candies, the Pregnant Belly Cake covered in fondant that I made for our baby’s gender reveal party, and the Bachelorette Party Corset Cake decorated so nicely with mascarpone cheese frosting – one of my very first cakes posted on the blog.

Disclaimer: I still have a few recipes that may seem to be a little more complex and will take more time to prepare. I will share these with you because they are our family favourite recipes and also for people who are passionate about cooking and want to experiment more.
