A little bit about me
I am a 20-something year old woman,
recently and happily married to a wonderful man who always enjoys my ‘experiments’ in the kitchen (or at least he pretends to like them ). Although I am working in IT, cooking has been one of my favorite hobbies for more than a decade. I am certainly not an expert but I love to try and I am knowledgeable enough to create my own variations of the recipes I like by adding, substituting or omitting some ingredients. I still have a lot to learn about how to make food look as good as it tastes!
Why Roxy’s Kitchen?
The idea of blogging about the recipes tested by me came from my love for cooking and a willingness to keep track of my own recipes or the ones I decide to try out from a cookbook, website or TV show. I can’t remember how many times I cooked something delicious just to realize, perhaps months later, that I can’t seem to remember the magic ingredients used, especially since I don’t usually cook the same dishes over and over.
Also, we are always on the rush and always busy with work leaving us less and less time to spend in the kitchen of our home. Breakfast, lunch or dinner … it seems fast-food restaurants and pre-cooked meals are always the answer nowadays! Well in my case this is not the answer; I prefer cooking quick and easy recipes and in most cases I end up spending less than 30-45 minutes in the kitchen to prepare our meals (except when baking crazy cakes ). I am also a strong advocate of cooking at home for fun, flavour and a healthy lifestyle. Some of the recipes may seem to be a little more complex and will take more time to prepare. I will share these with you because they are some of my top favourite recipes and also for people who are passionate about cooking and want to experiment more.
And finally, something about my background and food preferences…
I moved to Toronto, Canada when I was 19 years old. I grew up in Romania with little exposure to the international cuisine. Toronto’s multicultural diversity has definitely made me explore different cuisines throughout the past years so I will share with you our favourite recipes from all over the world. Nonetheless, I still love Romanian food and you will see that influence in some of my recipes.
